The secret of our pizza is the dough. The difference that sets our dough apart is the long rise and perfect hydration. It’s made daily using ”00” flour, water, salt, yeast and raised at room temperature for over a day. We use quality ingredients from local farms, vendors, and Italian imports to make a simple yet tasty pizza.

Our chef Gennaro Rusciano, a certified Pizzaiolo Verace from A.V.P.N. (Associazione Verace Pizza Napoletana), was born in Napoli (southern Italy) to a family of restaurateurs since the 1930’s. He decided to follow his family's footsteps, developing culinary skills while working in Europe. At Rusciano's we combine these traditions, his culinary passion with new innovations to create an exceptional food experience. In 2016, Gennaro made the decision to uproot his life for the opportunity to come to the United States with his dreams and a passion to share an Authentic Taste of Napoli with the Midwest.
